        不同氮?dú)鉂舛荣A存環(huán)境下片煙主要化學(xué)成分與感官質(zhì)量變化的關(guān)系

          [摘 要]為研究片煙在不同氮?dú)鉂舛荣A存環(huán)境中常規(guī)化學(xué)成分與感官質(zhì)量變化的關(guān)系,將興義煙葉儲(chǔ)運(yùn)站煙葉倉(cāng)庫內(nèi)已經(jīng)醇化三年的2010年陳煙和處于初始醇化狀態(tài)的2013年新煙置于同一倉(cāng)儲(chǔ)條件下,分別在不同氮?dú)鉂舛拳h(huán)境中貯存養(yǎng)護(hù),期間在不同時(shí)間點(diǎn)對(duì)煙葉常規(guī)化學(xué)成分和感官質(zhì)量進(jìn)行檢測(cè)和評(píng)價(jià),結(jié)果表明:(1)總糖、還原糖、總植物堿和PH值均表現(xiàn)為下降趨勢(shì),下降幅度表現(xiàn)為自然醇化>充氮85%>充氮90%>充氮95%;(2)總氮、氯和鉀變化趨勢(shì)不明顯;(3)初始醇化新煙內(nèi)在感官質(zhì)量評(píng)吸得分表現(xiàn)為:自然醇化>充氮85%>充氮90%>充氮95%;醇化到位陳煙表現(xiàn)出相反的規(guī)律;(4)PH值與內(nèi)在感官質(zhì)量的變化存在顯著的相關(guān)性。因此,氮?dú)赓A存能夠有效抑制片煙醇化,減緩醇化到位煙葉質(zhì)量衰減的速度,氮?dú)鉂舛仍礁咭种菩Ч矫黠@,同時(shí),還能通過對(duì)PH值的檢測(cè),輔助判斷煙葉醇化質(zhì)量。

          氮?dú)鈿庹{(diào)作為一種國(guó)際公認(rèn)的綠色儲(chǔ)存技術(shù),目前已被廣泛應(yīng)用于醫(yī)藥、糧食、果蔬及食品領(lǐng)域的保鮮、保質(zhì),效果顯著,行業(yè)內(nèi)部分單位應(yīng)用氮?dú)鈿庹{(diào)貯存煙葉原料,其主要目的是滅蟲、防霉變,充氮貯存對(duì)煙葉內(nèi)在質(zhì)量影響方面的研究還未見報(bào)道。正是居于此,本課題通過對(duì)相同倉(cāng)儲(chǔ)環(huán)境和不同氮?dú)赓A存條件下,不同貯存時(shí)間點(diǎn)煙葉樣品感官質(zhì)量及主要化學(xué)成分的變化規(guī)律進(jìn)行分析,了解煙葉化學(xué)成分與感官質(zhì)量變化的相關(guān)性,探索煙葉原料在氮?dú)赓A存環(huán)境下,氮?dú)鉂舛扰c醇化速度、醇化質(zhì)量的關(guān)系,以期利用煙葉原料貯存過程中氮?dú)鉂舛鹊淖兓刂茻熑~原料醇化速度,延長(zhǎng)醇化到位煙葉原料質(zhì)量保持的時(shí)間,防止煙葉原料過度醇化,控制煙葉霉變和蟲害,對(duì)煙葉醇化進(jìn)程實(shí)施有效控制。
